The Backyard BBQ

Personally, I’m not a fan of the clean barbeque grill. A clean barbeque generally means it hasn’t been used much and the backyard barbequer doesn’t really know how to barbeque. Nothing worse than chicken over cooked because Bobby Barbequer who barbeques once a year doesn’t take time to experiment with wings, or bone in breasts that require the touch of the master. Or how about the soy sauce soaked chicken that seems to be the favorite of every novice at the que. If I wanted sodium, I’d barbeque a salt lick!

You don’t have to agree, but the grill itself needs to season with each use and the next meal always has a hint of what was cooked last. Now THAT’S backyard bbq. Don’t let the build up on the grill get too thick. Otherwise, you’ll change hats from a chef to a fire chief. I Like to let the grill burn when I’m finished an extra 10 minutes, that generally cleans the grill enough to make the grill ready for next friday night when you once again make the neighbors jealous with aroma that trumps the tuna-ring-around they had for dinner. Better yet, set up some tables and chairs in the front yard, invite the neighbors over and try this recipe:

ZESTY SPICY DILL Bone-in BREASTs

8 bone in chicken breasts
1 bottle of zesty italian dressing
Juice from one lemon
3 table spoons of taco seasoning
1 table spoon of dill

Marinate over night (24hrs). There is something special about the dressing, taco seasoning, lemon and dill that will make you come back for more.

Pre heat grill to 375, cook for 45 minutes, turning frequently, about every 4 to 5 minutes

Most importantly, prepare yourself, your family and friends for the best bird they have ever eaten. Don’t be surprised if you’re asked to barbeque the chicken for every neighborhood gathering and garner the nickname, Bobby Backyard Barbeque!
